You need to figure out if pursuing her is worth losing the friendship over. If she is in love with the other guy you just made your friendship awkward as hell. I would inquire about how she sees her current relationship and then decide which way to go based off how she sees it.
Just be there for her as best you can. Cultural divides and expectations can be tough to navigate sometimes, but make sure that your GF knows that you will always be there for her (no matter what). If her grades improve and you stay consistent in her life, in time her parents will be won over.
Also, try and learn more about her culture from her, like start doing stuff like celebrating Chinese New Years and learning Chinese phrases. Actions like this will help show to her parents that you're not just in it for the short-term and really do want to actually be a part of their culture and lives. Be persistent, don't give up and do whatever you can to prove yourself.
The trick is to not make your GF feel like she has to choose between a guy and her family, and to not create the impression in her parents that you derailed her education, or are an arrogant and superficial guy whose just got a passing interest in their daughter (and is never going to treat her like real wife material or earnestly want to be a part of a specifically Chinese family).
You did everything right, OP. She’s a grown woman and can use her words, she’s not a child.
And as a lot of other people are suggesting, play dumb and ask her to explain what you’re apologizing for. Maybe she’ll stumble into an epiphany.
Rapist.
I would flee immediately if my partner said that to me.
