I think honestly just saying “Remember how I couldn't pick you up before? I've been working really hot for a while now and–” and then gleefully picking her up, would be super sweet. You're making it about your strength rather than something to blame her/her weight for. Maybe punctuating it with some corny line about how you love her and you're willing to put in the work to give her what she wants, would help, too.
