Speaking up for fathers rights here, he doesn't have to 'take you to court' to get parental rights under UK Law. Both parents have equal rights in the UK, and a birth certificate is not a magical contract that you can use to your advantage to strip a father of his rights.
If you don't put him on the certificate he can get a Declaration of Parentage from the court and add himself to the certificate, and that's not something a mother can contest just because. Trying to strip a father of his rights by putting 'father unknown' on the certificate, when you know full well who the father is, would be seen as an act of bad faith by the courts in future battles, so I wouldn't recommend doing that.
Now whether or not he has access to his child is another matter. You could certainly argue in court that he's a danger to either himself or his child, and you may well have a case there judging by his behavior.
So my advice to you would be to act in good faith, acknowledge him as the father, and then see what happens with his behaviour.
