Life never gets easier or simpler and no amount of believing you are in control will change that. No amount of money, security, planning will matter when you get blindsided by life, but if you develop a relationship based upon knowing you are there fore each other in sunny days and rainy ones it has a better chance of lasting
If you do in fact want to spend the rest of your life with this woman, as it seems based on p1 you do, then the ceremony and the metal ring are something you s.o. is going to need from you. Unless she is double-speaking about needing stability, the man you are now and the situation you are in is the one she wants to marry. It is okay to be daunted by something this huge, but it seems like you are finding reasons not to marry her now “for her sake too”. Which isn't helpful for either her wishes to be married or your peace about it.
I am not trying to say it sounds like you don't want to marry her, but instead that it sounds like you have created for yourself a picture-perfect idea of what marriage should be like and you want to be able to do that before anything else, but like I said before, Life (and marriage) will never be the collection of scrapbook moments you want it to be. If you love her and do want to spend forever with her, she seems happy with the “Today you”, knowing it is in your character to want to be better. You aren't the one marrying “today you” so if you are okay being married to the version of you SO that she is Today? Why not tie the knot. You are still the You you are today regardless and what you want to achieve can be achieved regardless of whether you sign a legal document wear a band or not.
