Have you considered that when she approached you with the idea of an open relationship, she already had someone in mind? It’s possible she’s been talking to other guys who she is sexually attracted to but she doesn’t feel like she’s cheating. She calls it open relationship.

This is the right take. People can change. When they engage in morally problematic behavior they have two choices:
Rationalize it and keep behaving that way
See yourself for who you are and realize that you cannot be that person and change.
She chose number 2. Most people don’t because rationalizing is easier than changing. The way you show that you have changed is though action. She has demonstrated her change through the actions of breaking it off, telling you within the first few dates, and calling out friends on the same behavior.
