Seems like she might be going though some stuff. From what you wrote seems like this change in lifestyle might be in response to somthing deeper you don’t know about. Maybe try talking to her about that rather then the issue you have with her weight.
Pre pandemic me and my wife where trying unsuccessfully to have a baby. This lead to me internalising this failure as a trauma. In turn that trauma caused a lifestyle switch where I was able to got from ~60% bf down to 20%. So I know from personal experience that big changes in lifestyle can be due to negative impact to a person’s psychological health.
Not saying this is the case for your partner. Just trying to help you find her perspective.

OP, most, if not all of us, think you need to step back and reevaluate your relationship and all the facets of it. You need to find out if y’all are truly on the same page about things. You need to know if she’s going to manipulate a situation to get her way. You need to know why her ex is willing to do this “to keep the peace.” Because I don’t think that’s a very good sign, but I don’t know y’all. Counseling is recommended.
Create a fake ig account or get a random number and text him saying that you are friends with his girlfriend and she is cheating on him with her ex, and along with it send some proofs if you have any, like prints of text sended by her, or just mention exact dates she went to see her EX.
