A child has to be educated by law. She can’t just say he’s homeschooled but not teach him anything. And it will get worse the older the boy gets. If you can afford to pay for a tutor, arrange that, or set up an online school like was done during the pandemic. But whether she wants to discuss it or not, she will lose custody of him if anyone finds out and you have to make sure she knows that. A child in the foster care system is much worse than being in a public school. So she either educates him or loses him. She can’t keep him hidden in the house forever and she will be discovered eventually.

Pretty sure you know the answer to this, it doesn't even really beg questioning.
It boils down to this:
You have respect for your gf as a person: You tell her, and let the chips fall where they may. This might just be a life lesson for you and maybe you can at least be friends down the road.
OR
You have no respect for her, so you hide it in the hopes she never finds out, which will lead to subsequent lying down the road, to continue covering the orignal lie .. and when she does find out (bc she will, at some point) you will have made her feel stupid and humiliated for ever trusting you. And she'll walk out, hating you for life.
